A pan fried sausage patty, double American cheese & a fried egg. Served in a toasted English muffin.

The bread for this breakfast sandwich is a toasted English muffin. Shop bought one’s are great but if you want to go a step further & make your own, my recipe can be found here.
If you want to add a bit of luxury to your toasted muffin, spread each half with butter then toast in a frying pan!
When it comes to making the sausage patties, you want to use a good quality sausage meat that contains plenty of fat. This is the key to making patties that won’t dry out once cooked.
To add extra flavour we’re adding in some dried onion & garlic but feel free to change this up! Some smoked paprika & chilli flakes would work well if you’d prefer something a bit spicier….
Once the sausage meat has been formed into patties, we pan fry them until they’ve got a nicely browned crust & they are cooked all the way through. As we make them quite thin, the patties will only take a couple minutes on each side.
When the patties are almost cooked, a slice of American cheese is added to the top of each one & we steam them like you would a burger…
The Fried Egg
To get a perfectly circular fried egg, we need to cook them inside a metal ring. It’s important to oil the inside of each before adding in the eggs, otherwise they will stick.
If you haven’t got any metal rings, the eggs can just be fried like normal.
What To Serve With English Muffins
The sky’s the limit when it comes to toppings & fillings! Serve them with poached eggs & hollandaise sauce for an eggs benedict. Fill them with a sausage patty & a fried egg or toast them & slather them in butter…

Sausage & Egg Muffin
- 2 Large Frying Pans
- Digital Scales
- 9cm Non Stick Cooking Rings
- 250 g Sausage Meat
- 1 tsp Onion Granules
- 1 tsp Garlic Granules
- Salt & Pepper
- 4 English Muffins
- 8 Slices American Cheese
- 4 Large Eggs
- Sausage Patties.Start by placing the sausage meat into a large bowl.In a pestle & mortar (or spice grinder) grind the onion & garlic granules into a fine powder.Mix this into the sausage meat & season with salt & pepper.Portion into 4 equal pieces then shape into patties.Store in the fridge until ready to cook.
- Heat a large frying pan over a medium heat then add a splash of olive oil.Season one side of each patty with salt then cook seasoned side down in the frying pan until nicely coloured, 3-4 minutes. Season the patties with salt again then flip over. Cook for another 2-3 minutes then add a slice of cheese to the top of each patty. Add a splash of water to the pan, cover with a lid & allow to steam for 1-2 minutes or until the cheese is nicely melted.
- The Muffin.Whilst the sausage patties are cooking, cut each muffin in half & toast. Heat another frying pan over a medium heat, add a good splash of veg oil then fry your eggs to your liking.To assemble, place a slice of cheese onto one half of each muffin. Top with the sausage patties, followed by the fried eggs then the other piece of muffin. Serve immediately.
Cook the sausage patties over the boiling plate & toast the muffins & fry the eggs on a piece bake-o-glide over the simmering plate. When making the sausage patties, I recommend frying a small amount off first, to check the seasoning. For the patties, you can use ready made sausage meat, remove the skins off of sausages or make the sausage meat from scratch. The patties can be made up to 1 day in advance. If you want your eggs to be perfectly round, you’ll need to cook them in an metal egg ring. Make sure to grease the inside first to stop the eggs from sticking.
