Sausage & Egg Muffin

Recreate the famous breakfast muffin at home…
A pan fried sausage patty, double American cheese & a fried egg. Served in a toasted English muffin.

Ingredients

Sausage Patties

  • 250 g Sausage Meat
  • 1 tsp Onion Granules
  • 1 tsp Garlic Granules
  • Salt & Pepper

The Muffins

  • 4 English Muffins
  • 8 Slices American Cheese
  • 4 Large Eggs

Instructions

  • Sausage Patties.
    Start by placing the sausage meat into a large bowl.In a pestle & mortar (or spice grinder) grind the onion & garlic granules into a fine powder.
    Mix this into the sausage meat & season with salt & pepper.
    Portion into 4 equal pieces then shape into patties.
    Store in the fridge until ready to cook.
  • Heat a large frying pan over a medium heat then add a splash of olive oil.
    Season one side of each patty with salt then cook seasoned side down in the frying pan until nicely coloured, 3-4 minutes. Season the patties with salt again then flip over. Cook for another 2-3 minutes then add a slice of cheese to the top of each patty.
    Add a splash of water to the pan, cover with a lid & allow to steam for 1-2 minutes or until the cheese is nicely melted.
  • The Muffin.
    Whilst the sausage patties are cooking, cut each muffin in half & toast. Heat another frying pan over a medium heat, add a good splash of veg oil then fry your eggs to your liking.
    To assemble, place a slice of cheese onto one half of each muffin. Top with the sausage patties, followed by the fried eggs then the other piece of muffin.
    Serve immediately.

Notes

To Cook On An Aga.

Cook the sausage patties over the boiling plate & toast the muffins & fry the eggs on a piece bake-o-glide over the simmering plate.
When making the sausage patties, I recommend frying a small amount off first, to check the seasoning.
For the patties, you can use ready made sausage meat, remove the skins off of sausages or make the sausage meat from scratch. The patties can be made up to 1 day in advance.
If you want your eggs to be perfectly round, you’ll need to cook them in an metal egg ring. Make sure to grease the inside first to stop the eggs from sticking.
