Components Of This Sandwich
Roast Chicken
This sandwich is designed to use up any leftover chicken from a Sunday roast dinner! For 4 sandwiches, you’ll need 400 grams of cold, shredded chicken which equates to around half a medium chicken. If you haven’t got any leftover chicken, you could roast a couple of chicken thighs or breasts.
Black Garlic Mayo
Using black garlic makes for a next level garlic mayo! This stuff’s rich, tangy & creamy and works fantastically with the roast chicken & salty crisps.
To make our black garlic mayo, we crush black garlic cloves into a smooth paste (either in a pestle & mortar or with the side of a knife) then mix with mayonnaise, dijon mustard, lemon juice, salt & pepper. That’s all there is too it!
Salted Crisps
When it comes to making a crisp sandwich, you’ll want to choose a flavour that compliments the other items in the sandwich. Salted crisps work best for our black garlic chicken sandwich but roast chicken flavour crisps will work as well (for double the chicken flavour!).
I used Kettle Chips for my sandwiches but pretty much any salted crisps will work. Walkers or Pringles would work well!
Honey Roast Ham
Slices of sweet, honey roasted ham compliment the salty crisps & tangy garlic mayo perfectly! You can get this from most supermarkets or butchers. We’re using 2 slices of ham per sandwich.
Sandwich Bread
I used my potato sandwich bread for these sandwiches but any good white bread will work here. A tiger bread would also be a great alternative! I like to butter the bread when making sandwiches but this comes down to personal preference.
