Pestle & Mortar
Black Garlic Mayo
- 4 Black Garlic Cloves
- 200 g Mayonnaise
- 1 tsp Dijon Mustard
- 2 tsp Lemon Juice
The Sandwich
- 8 Slices White Bread (See Notes)
- 400 g Leftover Roast Chicken (Shredded)
- 8 Slices Honey Roast Ham
- 100 g Salted Crisps (See Notes)
- Butter (For Spreading)
The Sandwich
Place the shredded chicken & black garlic mayo into a mixing bowl then mix together.
Next, generously butter one side of each slice of bread.
Take four slices of bread, top each with 2 slices of ham then spoon over the chicken. Top each sandwich with a good handful of crisps, followed by the remaining slices of bread.
Slice each sandwich in half then serve!
1. Roast Chicken - These sandwiches are a great way to use up leftover roast chicken. For 4 salads, you’ll need 400 grams of chicken, which roughly equates to half a medium chicken.
2. Black Garlic - Black garlic is available to buy in some supermarkets or online. Alternatively, regular garlic can be used for the mayo. You won't need to use as much though - I'd start with 3 garlic cloves.
3. Bread - I used my potato sandwich bread for this sandwich but any good white, sandwich bread will work!
4. Crisps - I used salted Kettle Chips for my sandwiches but pretty much any salted crisps will work as well. Roast chicken flavoured crisps will also work!
