These gravy dipped roast beef sliders are a fantastic way to use up leftover meat from a Sunday roast!

To make these, we’re taking a batch of tanghzong dinner rolls, filling them with thinly sliced roast beef, plenty of cheese & a punchy horseradish mayo. We’re then pouring over a mustard butter sauce, sprinkling with poppy seeds then baking until the cheese is melted & gooey. Super easy stuff!

Components Of These Sliders

Dinner Rolls

Homemade dinner rolls (or Hawaiian rolls) make the best sliders, I used my tangzhong dinner rolls! Make sure to keep the rolls attached as a whole slab, which will make it easier to slice & assemble the sliders. Ready made rolls from a bakery/supermarket will also work, you’ll need 12.

Roast Beef

These sliders are a great way to use up leftover roast beef! I used leftovers from when I made my slow roasted sirloin of beef but any cut will work. Make sure to slice it nice & thin! I also like to remove some of the excess fat but that’s optional.

Cheese

We’re using 2 types of cheese for these sliders; nutty Emmental & sharp, mature cheddar. I used a mix of sliced & grated cheese but feel free to use just one type. You can also use different types of cheese if you’d prefer. Swiss cheese, Gouda & Gruyere will all work well.

Horseradish Mayonnaise

Roast beef & horseradish are a classic combination! For our sliders, we’re using ready made horseradish sauce (Colman’s is good!) mixed with mayo & plenty of salt and pepper. This tones down the heat from the horseradish whilst still providing plenty of flavour. Feel free to add more horseradish though, if you’d like your mayo to have more of a kick.

Mustard Butter

Classic slider almost always have a butter sauce poured over them before they are baked, which is what we’re going to be doing for ours!

To make our mustard butter, we place butter into a pan, along with Dijon mustard, Worcestershire sauce, garlic powder, salt & pepper. We then melt this over a low heat before pouring it over our assembled sliders. If you’d prefer your mustard butter to have more heat, use English mustard instead of Dijon.

Poppy Seeds

Another classic slider component! We’re sprinkling a generous amount of poppy seeds on top of our sliders before baking which gives them some extra crunch & a subtle nutty flavour. Feel free to leave these out if you’d prefer or you could use sesame or nigella seeds instead.

Roast beef sliders can be prepared in advance & stored in the fridge for 1-2 days. To prepare the sliders in advance, assemble them but don’t pour over the mustard butter until just before you cook them.

What gravy is best for French dip sliders?

I like to serve my roast beef sliders with red wine gravy, as I tend to make sliders the day after making a roast dinner (with leftover beef & gravy). Gravy granules dissolved in water will work as well though.

Equipment

Ingredients

Horseradish Mayonnaise

  • 100 g Mayonnaise
  • 65 g Horseradish Sauce (See Notes)

Sliders

  • 12 Dinner Rolls (See Notes)
  • 500 g Roast Beef (Thinly Sliced)
  • 200 g Sliced Emmental
  • 100 g Mature Cheddar (Grated)
  • 1 tsp Poppy Seeds

Mustard Butter

  • 100 g Butter
  • 2 tsp Dijon Mustard
  • 2 tsp Worcestershire Sauce
  • ½ tsp Garlic Powder

To Serve

  • 500 ml Gravy

Instructions

  • Preheat an oven to 175°c/155°c fan (350°f/310°f).

Horseradish Mayo

  • Add the mayonnaise & horseradish sauce into a mixing bowl then season well with salt & pepper. Mix to combine then set aside.

Sliders

  • Cut your dinner rolls in half horizontally then place the bottom onto a lined baking tray.
    Make sure to keep your dinner rolls attached together!
  • Spread the horseradish mayo over the bottom half of the buns then top with the sliced Emmental followed by the roast beef then the grated cheddar. Place the top half of the rolls on top.
  • Next, place all of the ingredients for the mustard butter into a small saucepan, along with a good pinch of salt & pepper. Set over a low heat & leave to melt, stirring to combine.
  • Pour the mustard butter all over the sliders then sprinkle over the poppyseeds.
  • Bake the sliders for 10 minutes then cover with foil & bake for another 15-20 minutes, until the cheese is melted. Cut into individual sliders to serve.
  • Warm the gravy up whilst your sliders are baking then serve in bowls on the side (for dipping!).

Notes

1. To Cook In An Aga – Cook the sliders in the baking oven, on the bottom set of runners.
2. Dinner Rolls – This recipe works great with our tangzhong dinner rolls. Alternatively, you can use a slab of 12 pre made dinner rolls or Hawaiian rolls.
3. Roast Beef – I used leftover slow roasted sirloin for my sliders but any cut of roast beef will work. Make sure to thinly slice the beef. I like to cut off any excess fat as well but this is optional.
4. Cheese – I like to use a mix of cheddar & Emmental but feel free to use different cheeses if you’d prefer.
5. Gravy – Homemade gravy or gravy granules dissolved in water will both work here. I used some of my red wine gravy.
6. Leftovers – Any leftover sliders should be kept in the fridge & eaten within a day or two. You can serve them cold or reheat in the oven.
