Kettle Chip Rocky Road
We’ve added crushed up salted Kettle chips into a batch of classic rocky road! It’s rich, squidgy, crunchy & salty, plus it makes a fantastic snack.

You can’t really go wrong with a batch of rocky road. It doesn’t require any baking, can be customised however you like and will easily keep for several weeks so is on hand for when you’re feeling snacky!
In this recipe, we’re making a classic rocky road but with the addition of crushed up Kettle chips for some added crunchy & saltiness. This no bake rocky road is super easy to make, simply melt some good quality chocolate with butter & golden syrup then add in your mix ins, transfer to a tin then set in the fridge.
Speaking of mix ins, this rocky road contains big chunks of marshmallow, chopped up Turkish delight, toasted nuts and crushed biscuits & Kettle chips. However, you can change the mix ins however you like. That’s the great thing with rocky road!
What Is Rocky Road?
Rocky road is a type of no bake fridge cake, originating from Australia. Here, melted chocolate is mixed with marshmallows as well as other mix ins (think biscuits, nuts, pretzels, potato chips & loads more!) then set as a traybake before being cut into chunks.

Rocky Road Components
The great thing about rocky road is that you can add in pretty much whatever you like! In this recipe, we’re using all of the components that you’d find in a classic rocky road (chocolate, marshmallows & biscuits), as well as some chopped up Turkish delight, toasted nuts & crushed Kettle chips. Feel free to swap/substitute any of the components however you like though!
- Chocolate
Using a good quality chocolate is key to making the best rocky road! I used just dark chocolate for mine but milk or white chocolate will work as well or a combination of both milk & dark chocolate. - Golden Syrup & Butter
Melting golden syrup & butter with the chocolate gives our rocky road a glossy finish & makes it set slightly softer. This makes the rocky road easier to cut & eat. - Marshmallows
A key rocky road component! I like my rocky road to have larger chunks of marshmallow so I cut big marshmallows into pieces. However, mini marshmallows will work as well. - Nuts
Adding nuts into your rocky road is optional but does add in extra crunch & flavour. I used pecans but peanuts, almonds, walnuts & hazelnuts will all work well. For the best flavour, I’d recommend lightly toasting the nuts then letting them cool before using them. - Something Squidgy
Adding something squidgy into your rocky road adds another layer of texture. I used chopped up Turkish delight but this could also be glace cherries, nougat or gummy fruit sweets/candy. - Something Salty
Chocolate & salt compliment each other fantastically. Salt enhances the sweetness & flavour from the chocolate! I used salted kettle chips in my rocky road plus a sprinkling of sea salt on top. Some crushed salted pretzels or salted peanuts would also work really well.

How To Make Kettle Chip Rocky Road

- Chocolate Base
First, we add roughly chopped chocolate, butter & golden syrup into a heatproof bowl then warm in the microwave (or over a bain marie) until just melted. Once melted, we need to let the chocolate cool slightly before adding in the mix ins (so that they don’t melt). - Mix Ins
Whilst our chocolate is cooling, we can prepare the mix ins. To do this, we chop the marshmallows & Turkish delight into chunks, roughly chop up the toasted nuts & lightly crush the kettle chips & digestive biscuits. These all get placed into a large mixing bowl then stirred gently, so that each component is well distributed. - Mix Together
Next, we pour the melted chocolate over the mix ins then stir well, to combine. - Set In Tin
Once mixed, we transfer the rocky road into a lined 8″ square tin then press down gently, into an even layer. We sprinkle sea salt over the top then chill the rocky road in the fridge until completely set. This will take at least 3 hours. - Cut Into Portions
Once set, we take the rocky road out of the tin, cut into chunks then serve!

- Use a good quality bar of chocolate, to give your rocky road the best flavour.
- Add in plenty of mix ins. Rocky road is meant to be chunky!
- Store your rocky road in the fridge, to prevent it melting.

Kettle Chip Rocky Road
Equipment
- 8" Square Tin
- Heatproof Mixing Bowl

Ingredients
Chocolate Base
- 400 g Dark Chocolate (Roughly Chopped – See Notes)
- 150 g Unsalted Butter
- 75 g Golden Syrup
Mix Ins
- 200 g Marshmallows (Cut Into 2cm Pieces)
- 150 g Digestive Biscuits (Lightly Crushed)
- 150 g Turkish Delight (Cut Into 1 cm Pieces)
- 50 g Salted Kettle Chips (Lightly Crushed)
- 50 g Pecans (Lightly Toasted Then Chopped – See Notes)
- Sea Salt (To Finish)
Instructions
- Grease & line an 8" square with baking paper then set to one side.
Chocolate Base
- Add the chocolate, butter & golden syrup into a heatproof bowl then microwave in 30 second bursts until just melted. Alternatively, melt the chocolate over a pan of gently simmering water, making sure to stir regularly.
- Once melted, set the chocolate to one side & allow to cool slightly whilst you prepare the mix ins.The chocolate shouldn't be too hot as it will melt the marshmallows & Turkish delight. Make sure to let it stand for 5 minutes or so.
Mix Ins
- Add all of the mix ins (apart from the salt) into a large mixing bowl then gently mix together so that each component is well distributed.
- Next, pour the melted chocolate over the mix ins then stir well, to combine.
- Transfer the rocky road mix into the lined tin then gently press into an even layer.
- Sprinkle a pinch of sea salt over the top of the rocky road then leave to set in the fridge for at least 3 hours.
- Once set, take the rocky road out of the tin then cut into squares, using a sharp knife.
