Kettle Chip Rocky Road

We've added crushed up salted Kettle chips into a batch of classic rocky road! It's rich, squidgy, crunchy & salty, plus it makes a fantastic snack.

Equipment

Ingredients

Chocolate Base

  • 400 g Dark Chocolate (Roughly Chopped - See Notes)
  • 150 g Unsalted Butter
  • 75 g Golden Syrup

Mix Ins

  • 200 g Marshmallows (Cut Into 2cm Pieces)
  • 150 g Digestive Biscuits (Lightly Crushed)
  • 150 g Turkish Delight (Cut Into 1 cm Pieces)
  • 50 g Salted Kettle Chips (Lightly Crushed)
  • 50 g Pecans (Lightly Toasted Then Chopped - See Notes)
  • Sea Salt (To Finish)

Instructions

  • Grease & line an 8" square with baking paper then set to one side.

Chocolate Base

  • Add the chocolate, butter & golden syrup into a heatproof bowl then microwave in 30 second bursts until just melted. Alternatively, melt the chocolate over a pan of gently simmering water, making sure to stir regularly.
  • Once melted, set the chocolate to one side & allow to cool slightly whilst you prepare the mix ins.
    The chocolate shouldn't be too hot as it will melt the marshmallows & Turkish delight. Make sure to let it stand for 5 minutes or so.

Mix Ins

  • Add all of the mix ins (apart from the salt) into a large mixing bowl then gently mix together so that each component is well distributed.
  • Next, pour the melted chocolate over the mix ins then stir well, to combine.
  • Transfer the rocky road mix into the lined tin then gently press into an even layer.
  • Sprinkle a pinch of sea salt over the top of the rocky road then leave to set in the fridge for at least 3 hours.
  • Once set, take the rocky road out of the tin then cut into squares, using a sharp knife.

Notes

1. Storage - Once cut into portions, the rocky road should be stored in an airtight container in the fridge. It's best eaten within 2 weeks.
2. Chocolate - A good quality bar of dark chocolate is best for this recipe. I used a 54% cocoa dark chocolate but if you'd prefer a darker chocolate, I'd recommend using a 72% dark chocolate.
3. Mix Ins - The great thing about rocky road is that you can add in pretty much whatever you like! If you're not a fan of Turkish delight, you could use glace cherries. You could also add in different types of biscuits, dried fruit, desiccated coconut & more!
4. Marshmallows - I like larger chunks of marshmallow in my rocky road, so I use large marshmallows cut into chunks. You could use mini marshmallows instead though.
5. Nuts - If you're adding nuts into your rocky road, it's best to lightly toast them first. You can do this in a frying pan over a medium heat or in a 180°c/356°f oven. Once toasted, let the nuts cool then roughly chop them up. I used pecans but walnuts, hazelnuts & peanuts will all work well.
6. Kettle Chips - Make sure to use lightly salted kettle chips! Other brands of potato crisps/chips will work as well.
7. Turkish Delight - I used Fry's Turkish delight for this recipe. For 150 grams, you'll need 3 bars.
