Rice Krispie Fried Mozzarella Sticks With Hot Honey
These rice krispie fried mozzarella sticks are super crispy, melty & glazed with a spicy hot honey. Plus, they’re cooked from frozen so can be made in advance.

Mozzarella sticks are easily one of my favourite snacks (or maybe that’s just fried cheese in general!) and these ones are on another level!
To make these, we’re taking a block of low moisture mozzarella (this is key to getting the best cheese pull!), chopping it up into sticks then coating in seasoned rice krispies before deep frying until crisp & melty. We’re not done yet though because we’re also going to be coating the mozzarella sticks in a sticky, spicy hot honey glaze, to finish.
These jumbo sized, crispy mozzarella sticks make a perfect appetizer, side dish & snack. They’d also make a fantastic addition to a fried chicken sandwich or burger.

What You’ll Need
- Mozzarella – You’ll need a block of low moisture mozzarella for these fried mozzarella sticks. I used a block of Galbani mozzarella…
- Rice Krispie Coating – To make these mozzarella sticks, we’re going to be bread crumbing them but using rice krispies instead of breadcrumbs. We’ll be flavouring the rice krispies with smoked paprika & dried oregano. To coat the cheese, you’ll also need some plain flour, eggs & milk.
- Hot Honey Glaze – We’re going to be glazing our fried mozzarella with a homemade hot honey glaze. To make this, you’ll need honey, sriracha, butter & a lime.


How To Make Rice Krispie Fried Mozzarella Sticks

- Cut Mozzarella Into Sticks
Before coating the mozzarella, we need to cut it into sticks. To do this, we cut across the block of cheese, to cut in half (like opening a book!) then cut each half into 3″ long sticks, roughly 1″ wide. - Blitz Up Rice Krispies
Next, we use a food processor to blitz the rice krispies, to break them down to the texture of panko breadcrumbs. This is key for proper coverage when we coat the cheese. Once blitzed, we add in smoked paprika, dried oregano, salt & pepper then mix to combine. - Double Pané
To pané our mozzarella sticks, we toss them in seasoned flour, dunk in eggs & milk then roll in the rice krispies. We then dunk the cheese back in the egg then roll in the rice krispies again, making sure that the mozzarella is completely coated. - Freezing
Once coated, we place the mozzarella sticks onto a lined baking tray then freeze for at least 2 hours before cooking. - Deep Frying
To cook, we deep fry the mozzarella sticks at 180°c/356°f for 3-4 minutes, until crisp & golden brown, flipping them over halfway through. Depending on the size of your fryer, you may need to do this in several batches. Once cooked, we place the mozzarella sticks onto a plate lined with kitchen paper & let them drain momentarily. - Glazing
To finish, we place the mozzarella sticks into a large mixing bowl, pour over hot honey then toss, to coat.




Hot Honey Glaze
To take our rice krispie fried mozzarella sticks to the next level, we’re going to be glazing them with homemade hot honey!
This hot honey is super easy to make & can be made as hot as you like (add more sriracha if you like a hotter flavour). To make, we place honey, sriracha, butter & lime juice into a pan then cook on the stove until everything’s melted together & is sticky. This will only take a minute or two & is best prepared just before cooking the mozzarella sticks, so that it’s still warm…

Mozzarella Stick Tips & Tricks
- Use a good quality, low moisture mozzarella for the best flavour & texture (this is key to getting the best cheese pull!).
- For the best flavour, season the flour, eggs & rice krispies with salt & pepper before using to coat the cheese.
- Double pané the mozzarella sticks, for the best coating & to prevent leakage.
- Make sure your cooking oil is back to temperature between batches, for the crispiest coating (that’s not greasy!).
- Serve the hot honey glaze warm, as it will coat the mozzarella sticks better.
Frequently Asked Questions
Using a deep fat fryer is the easiest & most convenient way to fry mozzarella sticks but if you haven’t got one, you can heat a pan of veg oil up on the stove. Make sure to do this carefully though!
A low moisture mozzarella is the best choice for mozzarella sticks! Using this is key to getting the best cheese pull as it stays stretchy & melty once cooked. I used a block of Galbani mozzarella.
The great thing about homemade hot honey is that you can make it as spicy as you like! We’re using sriracha for our hot honey, which adds a gentle kick of spice but feel free to add more if you prefer it hotter.
Yes, breadcrumbs can be used instead of rice krispies! I’d recommend using panko breadcrumbs, for the crispiest coating.
There’s a couple of reasons why we cook mozzarella sticks from frozen. The first reason is that it prevents the cheese leaking out as the mozzarella sticks cooks. Cooking them from frozen means that the outside will form a crust before the cheese melts fully! The second reason is for convenience. Mozzarella sticks will keep for several months in the freezer, so they’re on hand whenever you need a quick side, appetizer or snack.
To prevent mozzarella sticks from leaking as they cook, we need to make sure that the cheese is completely coated in rice krispies (or breadcrumbs). A double pané is best! Cooking mozzarella sticks from frozen also helps prevent leaking!

Rice Krispie Fried Mozzarella Sticks With Hot Honey

Ingredients
Mozzarella Sticks
- 400 g Low Moisture Mozzarella (See Notes)
- 150 g Rice Krispies
- 2 tsp Smoked Paprika
- 2 tsp Dried Oregano
- 60 g Plain Flour
- 3 Large Eggs
- 3 tbsp Milk
Hot Honey
- 100 g Honey
- 25 g Butter
- 20 g Sriracha
- 1 Lime
Instructions
Mozzarella Sticks
- Cut the block of mozzarella into 12 sticks then pat dry with kitchen paper & set aside.Each mozzarella stick should be roughly 3" long & 1" wide.
- Place the rice krispies into a food processor then blitz briefly (using the pulse setting) to break the cereal up slightly.The rice krispies should be the same texture as panko breadcrumbs, so they'll only need a quick blitz. See the post above for a visual guide!
- Place the rice krispies into a mixing bowl, along with the paprika & oregano. Season with salt & pepper then mix to combine.
- Add the flour to a separate bowl, add the eggs & milk to another then season both bowls with salt & pepper. Give the flour a mix with a spoon and whisk the eggs & milk together with a fork.
- Next, take a mozzarella stick, toss it in the flour then dunk in the egg. Take the mozzarella out of the egg, let the excess drain off then roll in the rice krispies. Dunk the cheese back in the egg then roll in the rice krispies again, making sure that it is completely coated.
- Place the rice krispie coated mozzarella stick onto a lined tray then repeat with the remaining cheese. Once all the cheese is coated, place in the freezer & leave for at least 2 hours.The mozzarella sticks need to be completely frozen before we cook them.
Hot Honey Glaze
- Add the honey, butter, sriracha & lime juice into a small saucepan then set over a medium heat. Cook until melted, whisking to combine then bring to a simmer & cook for another minute. Set aside until needed.I'd recommend making the glaze just before frying the mozzarella, so that it is still warm. Alternatively, warm the glaze back up on the stove once your cheese is cooked.
Frying
- Preheat a deep fat fryer to 180°c/356°f.
- Once your oil's up to temperature, fry the mozzarella sticks for 3-4 minutes, until crisp & golden, flipping them halfway through. Once cooked, place the fried cheese on a plate lined with kitchen paper & leave to drain momentarily.You may need to cook the mozzarella sticks in batches, depending on the size of your fryer. Make sure to fry the mozzarella sticks long enough for the inside to melt/defrost nicely. You can check this with a food probe/skewer if you're unsure.
Glazing
- Place the fried mozzarella sticks into a large mixing bowl then pour over the warm glaze.
- Gently toss the bowl, to coat the mozzarella sticks in glaze then serve immediately.
