Everything Bagel Avocado Toast
A twist on a classic avocado toast! Here smashed avocado is served on toast with a perfectly poached egg & a sprinkle of everything bagel seasoning.

This dish combines a classic avocado toast with a crunchy everything bagel seasoning! There’s toasted bread, creamy smashed avocado, a perfectly poached egg & a generous sprinkle of our homemade everything bagel seasoning.
This avocado toast is fresh, vibrant & full of flavour! It’s incredibly easy to prepare and makes a great dish to serve for breakfast, brunch or lunch. I’ve been working on a seeded sandwich bread recipe so I used this for my avo toast but you can use pretty much whatever bread you like! Sourdough is a popular choice.

What You’ll Need
- Bread – A good homemade or shop/bakery bought bread is best for avocado toast. This could be sourdough, wholemeal or a white sandwich bread.
- Avocado – Make sure to use a ripe avocado! I like to make smashed avocado for avo toast but you could slice yours if you’d prefer.
- Lime Juice – Adding lime (or lemon) juice to the smashed avocado cuts through the creaminess & also helps prevent it going brown.
- Eggs – We’re topping our avocado toast with a poached egg, so fresh is best!
- Everything Bagel Seasoning – We’re making our own everything bagel seasoning but a ready made one will work as well.

Everything Bagel Seasoning
We’re making our own everything bagel seasoning by mixing toasted sesame & poppy seeds with garlic granules, onion granules & a good pinch of sea salt. Everything bagel seasoning keeps really when when stored in an airtight container, so you could make a big batch several weeks in advance.

Smashed Avocado
Smashed avocado is exactly what the name suggests! Here, we scoop the flesh out of an avocado, place into a bowl with lime juice, salt & pepper then smash up with a fork. You can make this as smooth or chunky as you like! Smashed avocado is best made just before serving but will keep for up to 2 days in the fridge. If you press a piece of clingfilm onto the avocado’s surface, it won’t go brown!


Poached Eggs – Step By Step
Perfectly cooked poached eggs are surprisingly easy to cook! The key to success here is to use fresh eggs, add a splash of vinegar into the poaching water & to keep the water at a gentle simmer (not boiling!). Here’s how to cook a perfectly poached egg!
- Fill a saucepan up with water, add in a generous splash of white wine vinegar (around a tablespoon for a medium sized pan), then set over a medium heat & bring to a gentle simmer.
- Next, crack a fresh egg into a ramekin then gently tip into the water. Repeat this step with a few more eggs but don’t over crowd your pan.
- Cook the eggs for 3-4 minutes for runny yolks or 5-6 minutes for hard set yolks.
- Use a slotted spoon to lift the eggs out of the water, letting them drain briefly over a plate lined with kitchen paper.
- Season the poached eggs with sea salt & freshly cracked black pepper then serve immediately.


Plating Up
Before plating up, you’ll need to toast your bread to your desired doneness. It’s best to do this just before serving, so the toast is still fresh!
To plate up our avocado toast, we place our slices of toast onto plates, spread on the smashed avocado then top with poached eggs & generous sprinkling of the everything bagel seasoning.

Tips & Tricks
- Use a homemade or good quality bakery (or shop bought) bread for the toast. Make sure to slice the bread nice & thick so that it can hold the toppings!
- Use a perfectly ripe avocado for the best flavour & texture. Season the avocado well with salt & pepper before serving.
- Stir some lemon or lime juice into the smashed avocado. The acidity cuts through the creaminess from the avocado, which balances out the flavours.
- Add a splash of vinegar into the poaching water, to help the poached eggs hold their shape.
Frequently Asked Questions
A thick slice of robust, sturdy bread is best for avocado toast. This could be sourdough, wholegrain bread or a white sandwich bread. Make sure to slice your bread thickly, so that it can hold the avocado & any other toppings.
Smashed avocado is best made just before serving but will keep for up to 2 days in the fridge. To stop the smashed avocado going brown, press a piece of clingfilm onto its’ surface.
Homemade everything bagel seasoning will keep for several weeks when stored in an airtight container.

Ingredients
Everything Bagel Seasoning
- ½ tsp Sesame Seeds
- ½ tsp Poppy Seeds
- ¼ tsp Onion Granules
- ¼ tsp Onion Granules
- A Pinch Of Sea Salt
Smashed Avocado
- 1 Ripe Avocado
- ½ Lime (Juiced)
Poached Eggs
- 2 Large Eggs
- A Splash Of White Wine Vinegar (For Poaching The Eggs)
To Serve
- 2 Slices Of Bread (See Notes)
Instructions
Everything Bagel Seasoning
- Add the sesame & poppy seeds into small frying pan then cook over a medium heat until lightly toasted. This will only take a minute or two.
- Add the toasted seeds into a small mixing bowl, leave to cool then stir in the garlic granules, onion granules & sea salt. Set this aside for now.
Smashed Avocado
- Halve the avocado, remove the stone then score & scoop out the flesh. Place this into a mixing bowl with the lime juice then season with sea salt & freshly cracked black pepper.
- Give the avocado a good mash with a fork (or whisk) then give it a taste to check the seasoning. Add in more salt & pepper as needed.
Poached Eggs
- Fill a medium saucepan up with water, add in a generous splash of white wine vinegar then set over a medium heat & bring to a gentle simmer.
- Crack an egg into a small bowl/ramekin then gently add into the simmering water. Repeat with the other egg then poach for 2-3 minutes, until the whites have set but the yolks are still runny. Once cooked lift the eggs out of the water using a slotted spoon, letting them drain briefly before serving.It's best to poach your eggs just before plating up.
To Serve
- Whilst your eggs are poaching, toast the bread then place onto plates.
- Spread half of the smashed avocado over each slice of toast then top with a poached egg. Sprinkle everything bagel seasoning over each portion of avo toast then serve!
