Here’s a festive batch of rocky road that’s perfect for Christmas gifting & snacking! It’s inspired by all things festive. We’re talking chocolate oranges, dried fruit, ginger biscuits, Turkish delight & that bowl of nuts that seems to appear every Christmas! It’s a really good way to use up leftovers from Christmas or for when you want to make an edible gift.

One of the many great things about rocky road, is that it doesn’t require any baking. You simply melt chocolate with butter & golden syrup then stir in a generous amount of roughly chopped marshmallows, biscuits, fruit & nuts. Make sure to keep everything chunky, for the perfect texture. And don’t forget a pinch of sea salt on top, for the perfect flavour…

Christmas Rocky Road Components

The great thing about rocky road is that it can be customised pretty much however you like! This is a festive batch, so we’re adding in spiced biscuits, toasted nuts, dried fruit, Turkish delight & classic marshmallows. You could even swap the biscuits out for gingerbread if you’d prefer.

Chocolate Base

  • Chocolate – I like to make my rocky road with dark chocolate but milk chocolate (or a mix of both) will work as well. For the best flavour, it’s key to use a good quality chocolate.
  • Butter – Make sure to use unsalted butter, as we’ll be adding salt to the rocky road ourself. Adding butter to rocky road helps it set soft enough to slice & eat!
  • Golden Syrup Golden syrup adds sweetness & flavour to the chocolate base. This also helps the rocky road set slightly softer. If you just used chocolate, your rocky road will be rock hard!
  • Orange – The zest of an orange adds some festive flavour to the chocolate! Feel free to leave this out if you’d prefer.
  • Sea Salt – Salt & chocolate work really well together! A small amount of sea salt brings out the flavours in our rocky road.

Mix Ins

  • Marshmallows – I like to use regular sized marshmallows for rocky road (not mini or jumbo!) as this lets us chop them up into chunk pieces.
  • Biscuits – This rocky road is made with ginger nut biscuits, which gives them a lightly spiced, festive flavour. You could use gingerbread or digestive biscuits instead if you’d prefer.
  • Nuts – You can add pretty much whatever type of nut (or a mix of nuts) that you like. I used a 50/50 mix of Brazil nuts & macadamia nuts. For the best flavour, make sure to toast them before using.
  • Dried Fruit – To keep our rocky road festive, we’re adding in some dried cranberries & glace cherries.
  • Turkish Delight – Turkish delight adds another layer of texture to our rocky road! I use Fry’s Turkish delight which is covered in chocolate & is available in most supermarkets.

How To Make Christmas Rocky Road

Rocky road is super easy to make & this batch is made with festive biscuits, nuts & fruit so it’s perfect for Christmas gifts! Making it is easy; you melt chocolate with butter, golden syrup, sea salt & orange zest, pour it over the mix ins then stir to combine. The mix gets pressed into a tin then we chill it in the fridge for a few hours to let it set!

  1. Chocolate Base
    To make the chocolate base for our rocky road, we add chopped chocolate & butter into a heatproof mixing bowl, along with golden syrup & a good pinch of sea salt. We melt this mix over a pan of barely simmering water then take it off the heat & stir in the zest of an orange. We need to let the chocolate cool slightly, so that it doesn’t melt the marshmallows & Turkish delight when we mix everything together.
  2. Mix Ins
    Whilst the chocolate mix is cooling, we need to prepare the mix ins. This is just a case of crushing up the biscuits & chopping up marshmallows, nuts, dried fruit & Turkish delight. I like to keep everything pretty chunky, for the best texture.
  3. Mix Together
    Next, we pour the cooled chocolate into the bowl of mix ins then stir to combine. Make sure that everything is coated in chocolate!
  4. Pressing Into Tin & Chilling
    Once mixed, we transfer the rocky road into a lined 8″ square tin then press down gently, into an even layer. We sprinkle sea salt over the top then chill the rocky road in the fridge until completely set. This will take at least 3 hours.
  5. Cut Into Portions
    When the rocky road is set, we can take it out of the tin, discard the baking parchment then cut into chunks, using a large sharp knife. You can serve the rocky road straight away or store it in an airtight container for up to a week.

Tips & Tricks

  • Use a good quality bar of chocolate, to give your rocky road the best flavour. If you’re not a dark chocolate fan, use milk chocolate instead! Or a mix of dark & milk chocolate.
  • Add in plenty of mix ins. Rocky road is meant to be chunky!
  • Store your rocky road in the fridge, to prevent it melting.
  • Melt some butter & golden syrup with the chocolate, to give the rocky road a glossy finish & to make it set slightly softer.
  • For contrasting texture, use a variety of mix ins. There should crunchy mix ins like biscuits & toasted nuts and squishy mix ins like marshmallows & Turkish delight.

Also, make sure that your rocky road has been chilled for at least a couple of hours so that it is completely set. You shouldn’t need to warm your knife up either!

Equipment

Ingredients

Chocolate Base

  • 400 g Dark Chocolate (72% Is Best)
  • 200 g Unsalted Butter
  • 100 g Golden Syrup
  • ¼ tsp Fine Sea Salt (Plus Extra To Sprinkle On Top)
  • Zest Of 1 Orange

Mix Ins

  • 150 g Ginger Nut Biscuits
  • 150 g Marshmallows (See Notes)
  • 150 g Turkish Delight (See Notes)
  • 100 g Toasted Nuts (See Notes)
  • 70 g Glace Cherries
  • 50 g Dried Cranberries

Instructions

  • Grease & line an 8" square with baking paper then set to one side.

Chocolate Base

  • Roughly chop the chocolate & butter then place into a heatproof along with the golden syrup & salt. Set over a pan of barely simmering water then cook until just melted, stirring regularly.
  • Once the chocolate's melted, take the bowl off the heat then stir in the orange zest. Set to one side & leave to cool whilst you prepare the mix ins.
    The chocolate shouldn't be too hot as it will melt the marshmallows & Turkish delight. Make sure to let it stand for 5 minutes or so.

Mix Ins

  • Add the ginger nut biscuits into a large mixing bowl then use the end of a rolling pin to roughly crush them. Don't crush them too small though!
  • Cut the marshmallows into 2 cm pieces then add into the bowl of biscuits.
    I like to use a pair of scissors to cut the marshmallows.
  • Roughly chop up the Turkish delight, nuts & glace cherries then add in the dried cranberries. Give the mix ins a stir, so that everything's evenly distributed.
  • Next, add the melted chocolate into the bowl of mix ins then use a spatula to stir well, to combine.
  • Transfer the rocky road mix into the lined tin then gently press into an even layer, using a palette knife.
  • Sprinkle a pinch of sea salt over the top of the rocky road then leave to set in the fridge for at least 3 hours.
  • Once set, take the rocky road out of the tin then cut into squares, using a sharp knife.

Notes

1. Chocolate – If you’re not a fan of dark chocolate, you can use milk chocolate instead or use a mix of milk & dark chocolate! Just make sure to use a good quality chocolate.
2. Marshmallows – I like to use regular sized marshmallows for rocky road, as we can cut them into chunky pieces. Feel free to use mini marshmallows if you’d prefer though.
3. Turkish Delight – I used Fry’s Turkish delight for this recipe, which is chocolate covered. For 150 grams, you’ll need 3 bars. Other brands will work as well though.
4. Toasted Nuts – I used a 50/50 mix of Brazil nuts & macadamia nuts but you can use pretty much whatever type of nut you like! If your nuts haven’t been toasted already, I’d recommend doing it yourself as they’ll taste better. To toast nuts, bake them in a 180°c/356°f for 4-6 minutes until golden brown. Alternatively, toast them in a frying pan, over a medium heat until golden brown.
5. Biscuits – Feel free to use digestive biscuits instead of ginger nuts if you’d prefer. Or use gingerbread for a festive alternative!
6. Storage – Rocky road should be stored in an airtight container & is best eaten within a week. If the weather’s warm you’ll need to store your rocky road in the fridge.
