Hot Honey & Sage Pigs In Blankets
These hot honey pigs in blankets are sweet, sticky & a little bit spicy! There’s good quality chipolatas, fresh sage, crispy bacon & a drizzle of chilli infused honey.

If you’re a new reader of this blog, there’s something that you need to know; I love hot honey! I’m also a big fan of pigs in blankets (and who isn’t?!) so glazing them with hot honey just makes sense. There’s fresh sage leaves underneath the bacon as well, for some extra festive flavour. These hot honey pigs in blankets are more suited to snacking than a Christmas dinner (because they’re spicy!) & I’d highly recommend serving them with a baked camembert!
The key to making the best homemade pigs in blankets is to use some really good quality chipolata sausages & streaky bacon. Other than that, they couldn’t be easier to make! They’re just sausages wrapped in bacon after all. They take very little time to prepare & to cook, they’re simply baked in the oven and drizzled with hot honey at the very end to glaze.

What You’ll Need

- Sausages – You’ll need chipolata sausages to make pigs in blankets. For the best results, make sure to use good quality sausages!
- Bacon – Pigs in blankets are made with streaky bacon. I used smoked streaky bacon but unsmoked will work as well.
- Sage – We’re placing a sage leave underneath the bacon on each pig in blanket. Feel free to leave this out if you’re not a sage fan!
- Hot Honey – I used JD’s jalapeno infused hot honey to glaze my pigs in blankets plus I sprinkled on some of their hot honey seasoning before baking. Feel free to use regular honey & omit the seasoning if you’re not a fan of spice!


How To Make Hot Honey & Sage Pigs In Blankets
We’re assembling these pigs in blankets ourselves! This only takes a few minutes to do & there’s fresh sage leaves underneath the bacon for extra flavour…
Assembly
Pigs in blankets are super easy to assemble, it’s basically just wrapping a chipolata sausage in a rasher of streaky bacon!
- Lay a rasher of streaky bacon on a chopping board then stretch & thin it out slightly, using the back of a knife. To do this, simply run your knife down the length of the bacon.
- Next, place a sage leaf in the middle of the bacon rasher, so that it’s facing the same way as the bacon. Use 2 sage leaves if they’re small!
- Place a sausage on top of the bacon, at the end closest to you then roll the sausage up in the bacon making sure that it’s fully covered.
- Place the pig in blanket onto a lined baking tray then repeat with the remaining sausages & bacon.
- Before cooking, drizzle the pigs in blankets with a small amount of vegetable oil then sprinkle lightly with the hot honey seasoning (if using).




Baking & Glazing
We’re going to be baking the pigs in blankets at 200°c/392°f, first for 18-20 minutes until the bacon is crisp & golden. Then we drizzle each pig in blanket with a generous amount of hot honey then bake for another 5-10 minutes until caramelised & sticky. I like to flip the sausages over halfway through, so that each side is glazed properly.
Serving Suggestions
Pigs in blankets are traditionally served as part of a Christmas dinner but they’re also good served with a Sunday roast dinner, on their own as a snack or in a leftover Christmas dinner sandwich! Pigs in blankets can be served as a main course during the festive season, with sides like mashed potatoes, chips, salad, seasonal veg or in a mac & cheese. As these pigs in blankets are glazed with hot honey, they’re more suited to snacking than a roast dinner. As I mentioned earlier, I’d highly recommend serving them with a baked camembert to dip them in!

To bake pigs in blankets in an Aga, bake them in the roasting oven on the second from bottom set of runners.
Pigs in blankets are cooked once the bacon is crisp & golden and the sausages are cooked through. Sausages need to reach an internal temperature of at least 75°c/167°f to be cooked through.
Pigs in blankets can be assembled up to 2 days ahead of time & need to be stored in the fridge.
Leftover pigs in blankets are best eaten within 2 days of being cooked & need to be stored in the fridge. Leftover pigs in blankets can be served hot or cold. To reheat, bake the pig in blankets at 180°c/356°f until piping hot. You might need to cover them with foil if they start to caramelise too much. You could also use leftovers to make my leftover pigs in blankets mac & cheese!
UK pigs in blankets are made by wrapping chipolata sausages with streaky bacon whereas American pigs in blankets are made by wrapping hot dog style sausages in pastry. UK pigs in blankets are served at Christmas & is what we’re making in this recipe!

Hot Honey & Sage Pigs In Blankets
Equipment

Ingredients
- 12 Chipolata Sausages
- 12 Rashers Streaky Bacon (Smoked Or Unsmoked)
- 12 Sage Leaves
- 2 tsp Vegetable Oil
- JD's Hot Honey Seasoning (Optional)
- 2 tbsp Hot Honey (See Notes)
Instructions
- Preheat an oven to 200°c/180°c fan (392°f/356°f). Line a large baking tray with baking parchment then set to one side.
- Place a rasher of bacon onto a chopping board & stretch/thin it out slightly, using the back of a knife.
- Next, place a sage leaf in the middle of the bacon rasher, so that it's facing the same way as the bacon.Use 2 leaves if they're small. There's a visual guide on this in the post above!
- Place a sausage on top of the bacon, at the end closest to you then roll the sausage up in the bacon making sure that it's fully covered. Place the pig in blanket onto the lined baking tray then repeat with the remaining sausages & bacon.
- Once all of your pigs in blankets are ready, drizzle the veg oil over them then sprinkle lightly with the hot honey seasoning (if using).
- Place the pigs in blankets into the preheated oven then bake for 18-20 minutes until the bacon is crisp & golden.
- Take the sausages out of the oven, drizzle over the hot honey then place back into the oven & cook for another 5-10 minutes, until sticky & caramelised. Serve immediately.Flip the sausages over half way through, so that they're glazed all over!
