This courgette, mint & feta couscous salad is fresh, vibrant, delicious & incredibly easy to make! You’ll only need a handful of ingredients to make this dish & there’s no cooking involved at all (we soak the couscous in stock!). In fact, it comes together from scratch in less than 20 minutes. It’s an absolute winner!

This homemade couscous salad is great eaten on its’ own but also makes a fantastic side dish to some pan fried fish, smoked or barbecued meat (lamb especially!) or just some simple roasted chicken. It’s incredibly versatile…

Components Of This Salad

This couscous salad comes together in no time at all & you only need a handful of ingredients to make it! To prepare, we soak dried couscous in stock, fluff it up with a fork then mix in fresh veg & a punchy lemon & herb salad dressing. Then to finish, we top the couscous with crumbled up feta cheese & a sprinkling of sumac.

Couscous

Homemade couscous is super easy to make! Simply mix dried couscous with an equal amount of hot stock (or boiling water), let it soak for 10 minutes then fluff it up with a fork. I like to use different type of stocks depending on what I’m serving my couscous with. I served this salad with my bbq lamb kofta meatballs so I used lamb stock. Chicken or veg stock will work as well though.

Lemon & Herb Dressing

This punchy lemon salad dressing couldn’t be easier to make! Simply whisk together olive oil, lemon juice, sumac, dried oregano, dried mint, salt & pepper. I like to make the dressing in a large mixing bowl then add the couscous & veg straight in.

Fresh Veg

For this couscous salad, we’re going to be mixing in plenty of grated courgette, finely diced red onion, quartered cherry tomatoes plus some torn fresh mint leaves as well. If you’ve got one to hand, a thinly sliced pepper would make a nice addition as well.

Feta

To finish our couscous, we’re going to be topping it with some crumbled up feta cheese. Feta is made from sheep’s milk & has a salty flavour and crumbly texture. The salty flavour from this cheese seasons our salad really nicely!

Sumac

A sprinkling of sumac on top of our couscous salad finished it off nicely & looks great as well. Sumac is a dried spice with a tangy, citrusy flavour that enhances the flavour from our salad dressing.

Equipment

Ingredients

Couscous

  • 200 g Dried Couscous
  • 200 g Stock (See Notes)

Lemon & Herb Salad Dressing

  • 40 g Olive Oil
  • ½ tbsp Lemon Juice
  • ½ tsp Sumac
  • ½ tsp Dried Oregano
  • ¼ tsp Dried Mint

Salad

  • 1 Courgette
  • 1 Red Onion (Peeled)
  • 150 g Cherry Tomatoes
  • 1 tbsp Fresh Mint (Finely Chopped)
  • 75 g Feta
  • Sumac (To Sprinkle On Top)

Instructions

Couscous

  • Place the couscous into a mixing bowl & set to one side.
  • Next, bring your stock to the boil, pour over the couscous then give it a quick stir. Cover the bowl with clingfilm & let the couscous soak for 10 minutes.
    If you're using a stock cube, mix it with boiling water. If you're using ready made (or homemade) stock, heat it up in a pan on the stove.
  • Once soaked, fluff the couscous up with a fork then set to one side whilst we prep the other components of our salad.

Lemon & Herb Salad Dressing

  • Add all of the ingredients for the dressing into a large mixing bowl, season with salt & pepper then whisk to combine.
    We're going to be adding the couscous & veg straight into the dressing, so make sure to use a big enough mixing bowl!

Salad

  • Grate the courgette with a box grater, finely dice the red onion & cut the cherry tomatoes into quarters. Add all of these into the salad dressing along with the chopped mint & the couscous.
  • Give the salad a good mix then transfer to a large serving bowl.
  • Crumble the feta over the salad then sprinkle over a good pinch of sumac. Serve immediately!

Notes

1. Couscous – We’re using regular dried couscous for this recipe. This is available in most supermarkets & needs to be soaked in boiling water (or stock) before eating. 
2. Stock – You can use any stock for soaking the couscous or just boiling water. I served my couscous salad with my bbq lamb kofta meatballs, so I used lamb stock.
3. Leftovers – Any leftover salad should be stored in the fridge & is best eaten within a day or two.
