Welsh Rarebit Cheese Toastie

This Welsh rarebit cheese toastie is next level comfort food! There's crunchy bread, melty cheese, sticky caramelised onions & a Welsh rarebit toppping. It's a belter!

Equipment

Ingredients

  • 2 Thick Slices Of Bread (See Notes)
  • 100 g Mature Cheddar
  • 100 g Double Gloucester (See Notes)
  • 1 tbsp Marmite Caramelised Onions (Or Regular Caramelised Onions)
  • 1 tbsp Guinness Welsh Rarebit (See Notes)
  • Soft Butter (To Spread On Top)
  • Worcestershire Sauce

Instructions

  • First, thinly slice both of the cheeses then set to one side.
  • Preheat a grill to high & set a large frying pan over a medium heat.
  • Next, take a slice of bread & top it with half of the sliced cheese. Make sure that the cheese completely covers the bread!
  • Spoon the caramelised onions on top of the cheese then top the onions with the remaining cheese slices.
  • Place the other slice of bread on top then spread a thin layer of butter over the top slice of bread.
  • Carefully place the toastie into the hot pan, butter side facing down then cook for 2-3 minutes, until golden brown. Press the toastie down occasionally with a spatula, so that the bread browns evenly.
  • Next, spread a thin layer of butter onto the top piece of bread then flip the toastie over & cook for another 2-3 minutes, until golden brown.
  • Once cooked, transfer the toastie to a baking tray then spread a generous amount of rarebit on top. Place the toastie under the grill then cook for another 2-3 minutes, until the rarebit is golden brown & bubbling.
  • To finish, use a knife to score the rarebit in a criss cross pattern then drizzle over some Worcestershire sauce then serve.

Notes

1. Cooking On An Aga - Fry the toastie on the boiling plate then top with rarebit & cook in the roasting oven, on the top set of runners (or as high as you can get it without the rarebit touching the top of the oven).
2. Bread - I used a seeded sandwich bread for my toastie but a white sandwich bread or sourdough would work as well. Make sure to slice it nice & thick!
3. Cheeses - I used a mix of mature cheddar & Double Gloucester for my toastie but feel free to swap these out for different cheeses. Some Gruyere, Red Leicester or low moisture mozzarella would be some good choices.
4. Caramelised Onions - I used my marmite caramelised onions for this recipe but regular ones will work as well. You could also use a shop bought onion chutney or leave the onions out entirely.
5. Welsh Rarebit - We're topping our toastie with a generous spoonful of our Guinness Welsh rarebit. You could swap this out for some cheese sauce to make a croque monsieur style toastie or leave it out completely.
